PECANS FROM GEORGIA

On our way to Florida for Jon’s sister’s surprise birthday party, we stopped at Ellis Brothers Pecan farm in Georgia. As is our habit, we asked if the owner was present to speak with our family about the business. After finding out how interested we were in multi-generational family businesses, the owner ended up giving us a three-hour tour of his entire operation.

Contrary to the liberal’s propaganda to promote class envy, most business owners do not spend their monies frivolously but reinvest a good portion of their profits back into the business. This is certainly true of the present owner and his father. Family owned and operated since 1944, there are now four generations, the second and third now working in the business. The original 100 acres and pecan grove was purchased by Marvin and Irene. With a vision for his children’s children’s future, Marvin continued to purchase land, accruing 1200 acres before his death.

Receiving 250 acres for his inheritance, Elliot took over the management of his parent’s business and continued his father’s vision for future generations and thus continued to purchase land. He told us that he never wanted boats, just more land for his children and thus has acquired 1300 acres to date purchasing land each year for his children. This is multi-generational vision at its best and what the South did for her families! Marvin continues to plant more pecan trees each year.

Elliot and his sons, now manage the operation. Elliot began the retail and mail order business in 1978. His mother started the candy business. They now sell other nuts, peaches, candies, preserves, cakes, pies, butters, sauces, jelly, chow chow, gift tins, gift boxes, cookbooks, and other gift items.

Although pecans are not indigenous to Georgia, Georgia is now the largest producer. Elliot’s trees produce 2400 lbs of pecans per acre.

 

SHELLING PLANT

A machine shakes the nuts from the trees, another sweeps them off the ground, and a dump truck takes them to the Sheller, which can shell 900 pecans in one minute. From there they go through a process of separation where several infrared lasers continue to separate out any shell or other debris.

Once all meat, the pecans are washed in a water bath to kill any bacteria, and then separated again, halves from smaller pieces, and sorted pieces by size and color.

The pecans moisture content is also reduced for storage-some placed in the zero degree section for freezing, while others that will be shipped are placed in the 36 degree section of the storage warehouse. 


To keep pecans fresh, it is best to place those to be immediately eaten in the refrigerator, the others in the freezer. Pecans can be kept in the freezer for 10 or more years.

After our tour of each of the buildings, we then were taken into the candy making rooms ending in the cake, pie, and cookie baking room. The divinity was truly divine.

CHINA IS RESHAPING THE ENTIRE PECAN INDUSTRY
